Sorry Heath... I've kind of dropped the ball here. Here's what this week looks like for us:

Last night, I made a very tasty pasta with whole wheat angel hair noodles and shrimp tossed in olive oil with some garlic and parsley seasonings and chopped tomato, all topped off with a bit of parmesan cheese. It was very tasty and as I was eating it, I realized the recipe could vary according to taste. I thought that some cooked spinach would be good in there, trying different spices, etc. It was very easy to make so I highly recommend it.

Tonight: chicken kabobs! I've never done this before so it should be kind of fun. Recipe:
1 lb boneless skinless chicken breast
2 cups 1-1/2 inch fresh pineapple
1 each red and green bell pepper, cut into 1-1/2 inch pieces
1/2 BBQ sauce
3 tbsp. frozen orange juice concentrate, thawed

PREHEAT grill to medium-high heat. Using eight long wooden skewers (two, side-by-side, for each kabob), thread chicken alternately with pineapple and peppers onto skewers, to make four kabobs.
MIX barbecue sauce and juice concentrate; brush some of the sauce mixture onto kabobs.
GRILL 8 to 10 min. or until chicken is cooked through, turning and brushing occasionally with the remaining sauce mixture.

I'll probably serve that with brown rice and a salad.

Wednesday will probably be leftovers as I will not be home.... good luck, Mike. :)
Thursday, as per Kristen's suggestion I was planning on veggie soup since it was supposed to be raining. It doesn't look like it's going to until Friday, but I may make it anyway. I'll just turn the ac down so it feels less like summer for the night! :)

I made a new discover last night that could save the day if ever a day needed to be saved. Weight Watchers now makes ice cream cups. Again, it's not something that I think should be consumed on a regular basis, but if you just neeeeeed ice cream (and we all do from time to time!), then it's a good fix.

Workouts, incase you care, are constantly changing. I've discovered that the more weight you lose (29 pounds so far!), the harder it is to lose it. I'm now trying to get five days of cardio for 45 minutes each. We're starting to begin our weights workout with a five-minute warm up and we're setting a faster pace and supersetting so as not to lower our heart rates too much. We mix up our routine every 3-4 weeks to keep things interesting.

29 POUNDS! That is so cool. I am back at the gym this week and being careful with what I eat. This trainer that I spoke with on Friday said the same thing you did about changing things up every three weeks...so that your body doesn't get used to the same thing and has to push to do more. He wants me to eat about 1800 calories a day with 60% carbs/ 20% fat/ and 20% protein...which means lots of salad and whole grains. I have a long way to go but I guess it's all baby steps. Congrats!!!
