Tonight's post isn't a recipe, really, but merely ideas. It often occurs to me that if I can just think of something good to cook, I would have half of my problem solved. Many of us find that eating healthy is a difficult task to accomplish. Mike and I have endeavored to live a much healthier life style and I have to say that it is going quite well. We are so proud of ourselves and thrilled with how great we feel. So for anyone who may benefit from knowing what we're eating, here you go. I realize, of course, that I am cooking for two adults. The rest of you have children who may or may not eat some of these things. Whether you adapt the meal a little so there's something that the kids can enjoy or you try to get them to eat it anyway, I don't think that's an impossible hurdle to jump...
Last night we had a rotisserie chicken (previously cooked by Kroget as I ran out of time to cook... it worked!), boiled new potatoes, and yummy green beans. The chicken ended up making very tasty sandwiches for lunch today, full of lettuce, tomato, avocado, salt and pepper, and some light Miracle Whip. So good!!
Earlier today, I made a very good snack that even kids would enjoy: light vanilla yogurt mixed with some low fat cottage cheese (great source of protein) with strawberries, blue berries, and a bit of granola. Mmmmm...
Dinner: Broiled salmon, wild rice, asparagus, and a great salad. Recommendation: Nature's Seasonings Light Greek Vinegrette-- best salad dressing I think I've ever had. I also like sprinkling some feta cheese on my salads... adds a nice flavor.
Tomorrow's plan: Pasta Primavera-- I'll use whole weat penne pasta, chicken, squash, zuchinni, bell peppers, and carrots cooked in some olive oil with some Italian seasoning and parmesan cheese to top it off. Can't wait for that one!
And because I'll have chicken left in the refrigerator and the rest of the bell peppers, I'm going to make chicken fajitas this weekend. Our lunches will consist of either leftovers or I'll make tuna salad pita sandwiches.
Our new rule, by the way, is that we eat a piece of fruit or some veggies and drink some water before every meal. That way, we don't fill up on stuff that we shouldn't eat too much of and we make sure to get enough fruits and veggies.
We're only a few days into this new life-style of ours but we feel amazing. We've also really amped up our workouts which makes us feel even better. This isn't all for the purpose of gloating (ok maybe a little... we are proud of ourselves! :), but merely to share our successes in the hope that perhaps it will inspire some healthy ideas in others. Let me know if you like tonight's post. If so, perhaps I'll outline my meal plan every week. If not, then we'll just enjoy our own successes and leave the rest of you alone. :)

Ok, so I just read this and I think it's great. I did not know that you were on a new lifestyle but I always love to hear what works for other people. I love the yogurt and cottage cheese idea, though I am not eating dairy at the moment. I am trying to cut out a few things including dairy and bread for a little while. Water, fruits and veggies, whole grains and beans...at least that is the goal. Have to start somewhere. Oh, and I have to cut out SUGAR. I have to break the addiction because it is really holding me back. Post more!
