After some positive feedback, I shall post again...
First of all, let me just say once again how GREAT we feel!! I have lost 10 pounds and several inches so far and Mike has lost 4 pounds since the beginning of last week! WAHOO!!! Neither one of feels at all deprived. Of course, neither of us has had any addictions to break, ie. caffeine, sugar, and whatnot, so this hasn't been as difficult for us as it may be for others. We have loved the transition to this new lifestyle and we particularly enjoy doing this together. It is a HUGE help to have that mutual support so if someone is thinking of their own lifestyle change, try to get your spouse on board. Neither of us could do this as successfully without the other.
This week's meal plan:
Ok we broke a rule on Monday-- we're not supposed to be eating out during the week but we had to deal with car issues after Mike got out of work so we hit the Subway on the way home. Not a big failure, though-- we easily could have gotten something completely unhealthy but we didn't. 10 points for us!
Tuesday-- I started out making turkey burgers but quickly realized that turkey is a very different consistency and it all fell through the grates on the grill and dinner was ruined. Take 2: chicken fajitas. I was in a hurry at that point so I sliced up some bell peppers and onion that I had left from one of last week's meals, the remaining chicken, some avacado and tomato. I cooked the chicken, threw in some pre-made fajita seasoning (lame, I know... didn't have other spices on hand), cooked the onion and peppers in a different skillet until tender, and then mixed that all together. I put all of that on whole wheat tortillas topped with the avacado and tomato, black bean pico (bought pre-made) and a little bit of fat free sour cream. It was actually pretty good, though I would do different spices instead of the packet next time.
Wednesday-- I think I'm going to try the turkey burgers again, but I'll definitely do some research on how to stop them from falling apart. They will require a recipe, which I'll post later if it all ends up tasting good. I've never had a turkey burger before but we're up to try it. If that doesn't pan out, I'll do grilled chicken sandwiches with swiss cheese and mushrooms.
Thursday-- Shrimp stir-fry and brown rice. Not entirely sure how I'll cook this one either but once I do it, and if it's good, I'll post that recipe too.
I discovered a new trick the other day. You know how it's incredibly easy when you're home and bored to just grab something to nibble nearly every time you pass the kitchen? So often, the easiest things to grab are not always the healthiest. Well, I bought a mixture of brocolli, cauliflower and carrots and I just left that bag out on the counter all day so I would grab a veggie instead of anything else. It totally worked. Today, I bought some hummus so I can have a tasty and healthy dip for my veggies.
Another thing I enjoy: at Walgreens, they sell these individually portioned packages of trail mix with various kinds of nuts and dried fruits. Though there is a higher fat content in nuts, they are very healthy and given that it's already portioned, you won't eat too many of them. Good treat.
Fiber One bars are also very tasty. I like the chocolate oat ones. If you have an uncontrollable sweet tooth, don't buy them because you could be tempted to eat the whole box. However, if you can eat just one every now and again, it may appease your desire for something chocolatey and it's got lots of good nutrients in it. They are, in fact, on Bob Greens list of Best Foods.
Workouts are still going strong. I'm back to running three miles at a time, which I hadn't been able to do since before I got pregnant. Quite the accomplishment!
So there you have it for this week... I'll let ya know how the rest of this week's meals go. I know I'm kind of taking this blog in a new direction, but no one else was posting anything so oh well. I vote that we all use this blog to share our health successes. We can all learn from each other so post away!

Ok, here is my health tip: Spend 3 hours at Coldwater Creek spa for your mothers day gift and you will find a new meaning to life. I have never, ever...ever had such a relaxing morning. And, it has made me want to eat healthier as well. Who knew?
I am all over that, Heather!!! On my way..... wanna watch Lacey for a few hours? :)
