Linda’s Chicken Divan
Whole fryer chicken – abt. 4 lbs. – Simmer until tender abt. 30 min. Cool and de-bone and break into pieces. Set aside.
Steam broccoli until tender, but not mushy, abt. 2 bunches (enough to cover bottom of 9’x13’ glass dish) Set aside.
Sauce: Use 2 qt. measuring cup, put 1 can cream of chicken soup in it then fill to top with leftover broth from cooking the chicken.
Put in saucepan with 1 cup mayo, 2 tsp. Lemon jc., ½ tsp. Curry powder. Heat and stir until smooth.
Now put broccoli in baking dish, then chicken, then pour all sauce over top. You can top with some Monterey Jack cheese or some buttered bread pieces.
Bake 375 deg. uncovered for about 25 min. until bubbly.
Serve over rice with yellow veg. like corn or squash.
